When I was working in a salt fish factory as a teenager, we occasionally got these strange fish mixed up with the cod. We threw them away, joking that ling looked like a water hose with a cod’s head. Now, of course, they are considered a delicacy.
Luckily I had the take-out version, because the lunch lady gave me nearly a whole fillet. I have an appetite, but that was too much for even me, so I’m having the leftovers for dinner.

Unfortunately I do not have a recipe for what the chef calls “Beatle sauce”, but it’s also good with Thousand Islands dressing or tartar sauce.
